Prepare yourself, here’s another super easy recipe that you’ll want to make all the time. Crock pot meals are some of my favorites. Especially the ones where you can just throw in the ingredients and magically come home to a delicious meal. Typically this Burgundy Beef Over Sweet Potato recipe is a favorite of mine in the fall, but the rainy weather and my current obsession with sweet potatoes made me crave it this week. It’s been one of my favorites meals since my childhood, a comfort food that isn’t terribly bad for you. I think it is especially delicious served over the sweet potato, and it is great over egg noodles as well. I really love the savory and sweet combination you get serving the burgundy beef over a sweet potato.
No exaggeration, this is the EASIEST crockpot meal I’ve ever made. With just four ingredients, it couldn’t be any simpler. Prep time is a whopping 5-10 minutes. You literally just throw it all in and let it cook. It’s safe to say that crock pots were one of the greatest kitchen appliances ever invented. Looking forward to dinner with minimal preparation once you get home from a long day is the best feeling ever. And this burgundy beef is certainly a meal to look forward to.
3-4 lb chuck roast
1 package dry vegetable soup mix, I use Knorr
1 cup burgundy wine, or any red wine
1 can tomato sauce
1. Place the chuck roast in a crockpot
2. Combine the dry vegetable soup mix, wine, and tomato sauce and pour over the roast
4. Cook the burgundy beef in a crock pot on low for 6-8 hours or on high for 4-5 hours until meat is easy to pull apart
5. Shred the roast and serve over baked sweet potato. I usually just microwave the sweet potatoes, puncture with a fork and microwave for 7-8 minutes.
