Each August my family hauls nearly 75 pounds of blueberries from my dad’s small Indiana hometown to the burbs for family and friends. Our yearly blueberry excursion has grown over the years along with our obsession for the delicious little berries, and all the amazing treats we create with them. Needless to say, over the years we have perfected our favorite recipes, from baked banana and blueberry oatmeal to blueberry lemon coffee cake and of course, blueberry muffins.
I’ll have to admit, blueberry muffins have always been a favorite of mine. Although I’ll be honest, my mom’s classic blueberry muffin recipe is hard to beat, this healthy version is tough competition. It’s no secret that I love food, so I’m always trying to find healthier versions of my favorites so that I can enjoy them without the guilt while still indulging in what seems like the real deal. These muffins are just that, a delicious alternative that you won’t even realize is healthy.
With a ton of oats for a bit of nutrition, canola oil instead of butter, and whole wheat flour, these healthy blueberry muffins are a perfect on the go breakfast or just a simple snack. The sugar sprinkled topping is optional, but let’s be real, it’s worth it. You can’t be that sweet crunchy topping.
½ cup whole wheat flour (I love using Bob’s Red Mill)
½ cup all-purpose flour
1 ½ cup oatmeal (I prefer Old Fashioned Oats)
½ cup granulated sugar (plus a little extra to sprinkle on the tops, optional)
1 tablespoon baking powder
¼ teaspoon salt
1 cup almond milk (I’m obsessed with Califia Farms Vanilla)
2 teaspoons vanilla extract
2 tablespoons canola oil
1 cup blueberries (fresh or frozen)
1. Preheat the oven to 400 degrees.
2. Combine all wet ingredients in large bowl, mix until combined.
3. Add all dry ingredients to the bowl, mix well until all ingredients are combined.
4. Carefully fold in the blueberries.
5. Spray muffin tin with cooking spray.
6. Divide batter evenly into the 12 muffin cups
7. Sprinkle a bit of sugar on the tops of the muffins.
8. Bake for about 20 minutes or until muffins are lightly browned.
